What are Wonder Berries and How Do They Work?

Synsepalum Dulcificum (affectionately known as the Miracle Fruit or Wonder Berry) is grown in Ghana and other parts of Western Africa. It was first discovered in the early 18th century when explorers noticed local tribesmen eating these berries before a meal. When they tried them for themselves they experienced a peculiar effect. Sour and bitter foods had become sweet and enjoyable.

These berries contain a naturally occurring protein called miraculin that binds to the sour and bitter taste receptors on our taste buds. The sour and bitter tastes of foods do not change but they are no longer registered by the tongue and allow us to experience the other hidden flavors these foods possess for up to two hours.
